The One Where I Ramble About Random Shows…

I’m back! Life got crazy there for a while. I’ve been working a lot, and I’ve also been busy with school. I haven’t been cooking much, so I don’t have any recipes to share right now, but I plan on fixing that soon. We’ve also decided where we’re moving when the time comes, I’ll share that news when we’re a little farther along in our plans.  We’re cutting our food budget waayyy back, and we’re selling as many household things as we can that we no longer have use for, we are saving as much money as we can. It’s hard. It’s weird to think about living in a new place. We will have to use our navigation system to get to the store, the bank, and probably back home again. I’ve lived in my city for pretty much my entire life. I can get pretty much anywhere without a second thought.  Where we are going apparently gets a lot of snow in the winter. We get maayybeee an inch in the winter if we get any at all. And, I’m just going to come out and say it: I hate snow. I know, I know. I might as well say I hate chocolate. Oh, wait, I DO hate that, too. Snow sucks. I hate driving in it, walking in it I always feel like I’m going to slip and fall. It’s cold and when you play in it, you get wet and sometimes dirty. It’s gross. But I will get used to it. I’ll have to, but I will not drive in it. I refuse.

What else is going on around here? Well I’m in deep with my Grey’s Anatomy addiction again. I can’t help it. It makes me laugh harder than almost anything else I’ve watched, it also makes me cry harder that almost anything else I’ve watched. For those that watch it and are caught up (don’t worry those who aren’t caught up, no spoilers), I just finished season 6, and I bawled like a baby. I obviously knew the outcome, I can’t avoid ALL spoilers when I’m watching the show what, 4 years after it originally aired, but it was still gut wrenching.

I’ve also been addicted to Hart of Dixie. I am obsessed with small towns and southern living. In fact if I could live anywhere in the world, I would live in Stars Hollow. Yes, I know it’s not a real town, and no, it’s not even in the south. But I love it. Everyone knows everyone else. Everyone watches out for everyone else. They have festivals. You can walk anywhere in town. I. Love. It. My husband? Not so much. He will not live in the south, and he doesn’t much care for small towns. Because everyone knows everyone else. It’s a source of contention in our marriage. Not really. But kind of.  Anyway, back to Hart of Dixie. I am not a fan of the love triangle going on right now. I am not completely caught up, I just finished season 2 on Netflix. I neeeeed to find a way to watch season 3, like now. I’m going to come out and say it. I love George Tucker. Zoe needs to snap out of it and love him too. And he needs to just suck it up, admit he loves her, and they need to get married. I need a life. I recognize this.

School is sucking this quarter. I can’t handle Spanish 2, but I recognized this too late, and now I’m stuck. I hate it. I dread it every Monday, Wednesday, and Friday. Ugh. You know it’s bad when I prefer math over another class. Yeah. I’m also extra stressing, because I’m working this quarter and it’s hard. So hard.


Pizza Monkey Bread

I love pizza. I could eat it 5 nights a week and be happy. Since it’s not very healthy, I try to limit it to once every two weeks or so. It had been a while since we had pizza so I had a major craving, but I wanted something a little different. So I decided to try pizza monkey bread. It was amazing. So delicious.

2lbs Pizza Dough (I used store bought)

Pepperoni (Or your favorite meat pizza topping)

Mozzarella Cheese cut into cubes

Pizza Sauce for dipping

2 tablespoons melted butter with garlic and Italian Seasoning mixed in


Preheat oven to 400 degrees F.

Take a large marble sized piece of dough flatten in between your hands. Layer a piece or two of pepperoni on top, stick in a cube of cheese and pinch shut the dough. Dunk it in the melted butter and drop into bundt pan. Continue until all of the dough is gone. You can wait to preheat your oven until this step and cover the bundt pan for half an hour and then bake. this will give you dough that is a little less puffy. However, I let mine sit for maybe 10 minutes and we like it just fine. Bake for 30 minutes or until the top is very brown, but not burned of course. Serve with pizza sauce for dipping. Enjoy! We usually eat this with a salad on the side.

Working Gal

Well guys and gals, I have some news. I got a job! It’s nothing big, just a part time job as a cashier at a grocery store. I’ll still blog, some day it will be on a regular basis, but for now my goal is for at least twice a week. I just haven’t been sitting down long enough to blog. I started my yoga class this week, had orientation and my checker pretest, among other things to do. Because working and trying to find a new house isn’t enough along with full time school, I’m going to be starting a new diet. It’s not really a diet necessarily, but I really hate it when people say “It’s not a diet, it’s a lifestyle change…” Anyway, I’m going to start juicing again. I’m planning on juicing 3 times a day, for breakfast, a mid-morning snack, and lunch. Then I’ll eat a small meal of fish or chicken and some veggies and quinoa or something. In addition to my yoga class, I’ve been trying to get to the gym as often as possible… We’ll see how that goes with work and school. 

I’ve made a few things recently that I’m excited to share with you guys. The first is Pizza Monkey Bread. It was delicious. It was a little time consuming, but let me tell you, it was worth it! I also want to share a different recipe for crock pot roast that we tried the other night. It was so juicy it fell apart when you touched it with a fork and the flavor was delicious. I have a final tonight and I start work tomorrow, so I will try my hardest to share these recipes and pictures either Sunday or Monday.

Crock Pot Caramel Fail

Well folks. I failed. I attempted to make caramel from sweetened condensed milk in the crock pot, but it never got to be caramel. I got a light tan color, but no caramel. I cooked it on high for 6 hours, as opposed to low for 8 hours. I guess I’ll try 8 hours on low. So I have shortbread, but I haven’t tried it yet because I’m waiting for the caramel! 

I did have some success yesterday though. I did make myself some butterscotch chip cookies and they were delish. I’ll share the recipe tomorrow. I didn’t end up making bread or biscuits, but I think I will next weekend. 

I just had lunch with my sister on her lunch break at work and now I’m trying to find some motivation to get moving. The rest of my Sunday is not going to be that fun. I have a group project I need to finish up my part on, I have laundry to fold and put away, and some general picking up and organizing. I hope ya’ll enjoy the rest of your Sunday!

Cookies, Shortbread Bars, and Biscuits, OH MY!

Since I’ve been a bad blogger lately, I’m baking up a storm today, so I can share pictures, recipes, and reviews. I’m making butterscotch chip cookies (I don’t like chocolate. No, I will not eat the entire batch of cookies, I freeze them!), I’m also making salted caramel shortbread bars, and chocolate chip cookies. I may also bake some homemade bread and cheddar herb biscuits a la Red Lobster to go with our dinner tonight. After I get done baking everything I will write up some reviews.

Just Living Life

It’s been a busy month. School is going really fast since it’s a short quarter, so I’ve been really busy with that. Last week was my birthday, so we had a party on Sunday, then I had school all week and Thursday I left on an overnight trip to the casino with my parents. We had a lot of fun. They gave me some money to gamble with, and unfortunately, I lost all of it. Darn. But I still got a bunch of entries into the contest to win a million dollars. I can dream, right? 😉 We had a great dinner, spent a lot of time gambling and then slept pretty late the next morning. After getting home, my husband and I ran a few errands and then went to my parent’s house for dinner and to play Scattergories. That game is so much fun, but I can’t play without my sister. She has the best/funniest answers. I made more tomato sauce this weekend for lasagna. My grandma is out of town for a while, so my mom and I made two kinds of lasagna so the family could have dinner with my grandpa. I used a different recipe this time, that I liked a lot better, so I will post that recipe soon!

I’m loving school again this quarter which is nice. Last quarter was a little rough, and I got pretty discouraged. It’s nice to be back on the ball and doing well. I’m looking for a job, and it’s not going too well, so I’m a little frustrated with that. But something will come along for me, I’m sure.

A little update on Lucy. She’s getting HUGE. She’s only 4 months old, but she’s a big girl. She’s still very sweet, and she’s very smart, but…she’s very stubborn. And boy does she like to talk. We taught her the speak command, and instead of sitting or shake, she likes to talk. But she catches on to things quickly. So far she hasn’t been too destructive, although she did get a hold of a coconut bra and completely destroyed it. She also taste tested my Ugg boots and my leopard print flats, but apparently she didn’t like those too much. Lucky for her 😉

I hope life is treating you all kindly. I’ll try to post more often, I’ve been slacking lately! I’ll post some pictures of both of the dogs, as well as some more recipes. I’ll also recap my birthday party (It was a blast!!) and share some pictures from that.

First Day of Summer Quarter. Already!

Wow! It’s the first day of summer quarter already. At the end of the quarter I always promise myself that I will write more, but I get busy with things I can’t get done when school is in session and so writing goes to the way side. I only have one class today that meets in person, but I do have an online class that I have homework in already as well. I wanted to get to the gym after class, but we’re having my grandparents over for dinner, so I have to clean my house. My grandma is a neat freak, so I’m going to go a little nuts cleaning my house. I’ll have to see if I have time for the gym after I get done cleaning. At least dinner will be easy, we have potato salad and pasta salad leftover so all we’ll have to do is BBQ burgers and hot dogs. We also have a watermelon we need to eat up!

This quarter of school is going to be hectic. Summer quarter is a lot shorter than other quarters, and I’m taking 4 classes instead of my normal 3. But to add to the chaos, we’re considering a big move. My husband has a potentially great job opportunity in California. However, the cost of living in California is outrageous compared to where we live now and yes, he will be making more money, but I don’t know if it’s worth the big move to essentially be in the same situation we are in now. I think he might be a little bit happier with this other job, but he’s worked with this particular company before, and he didn’t exactly love it. We’ll see. 

My birthday is exactly one week from today. My birthday party is in 6 days. It’s going to be so much fun. Like I said before it has a luau theme, so there’s going to be lots of fruity drinks, kalua pork, pulled pork, and huli chicken. There will be sides of course, rice and macaroni salad. Soda. CAKE. And my step-mom has tons of decorations, so the house and yard will be decked out to the max. I’ll share pictures. Yay! I can’t wait.
